There’s no family like the Concepcion family – an entire brood that wants to eat breakfast food throughout the day, everyday. Eggs, bacon, French toast, pancakes, waffles – these ultimate breakfast winners sometimes known as “comfort food” and considered by many as that which they want to have when they’re under the weather, are the same ones the Concepcions dearly love for nearly all occasions.
One would be surprised, then, at how such humble breakfast fare could be elevated to the top of the tier with some ingenious twists. But the Concepcion family has always known this. Each time the family visited Europe, North America and Asia, they always looked for this type of fare when a spate of homesickness struck.
On one of the family’s long drives from Boston to Florida, they were all actually longing for “Spam and eggs” when they spotted a diner’s sign by the road that made them stop. The picture on the signage was everything they wanted to eat, inside a hot pan. The diner was called “sunny side up.” With their hunger pangs on overdrive after choosing to skip breakfast to get an early start for the day’s long drive, they entered the diner to fill up their willing stomachs.
James ordered the house specialty, the “Trucker Breakfast,” consisting of a stack of sourdough pancakes topped with three eggs, three sausages, and three rounds of bacon with a thick slice of Spam served on a huge serving plate. It was a real breakfast of champions, served with a thick wedge of watermelon on the side, and a hearty bowl of chicken noodle soup.
While enjoying this feast, the family met diner owner Maurice “Moe” Lavergne, a Creole native of the Big Easy, New Orleans. Since it was a Sunday, he was working in the diner with his daughter Leona to manage the Sunday crowd. James and Moe managed to converse between bites, and what struck James was the down-home belief that Moe swore by and which prompted him to set up his own diner: WHAT YOU WANT TO EAT IS PROBABLY WHAT OTHER PEOPLE WANT TO EAT. This one-liner captured the whole essence of the diner’s menu.
James left with a promise to hook up with Moe again in the near future. And in honor of this promise and the extremely satisfying breakfast James and his family experienced at Moe’s diner, Sunny Side Up fare is set to be unveiled at selected Days Hotel properties for a limited time.
